Oat flour cookies

Making cookies could not get any easier than these oat flour cookies with ingredients you probably already have in the cupboard. If you are an oat lover, you might like these for breakfast too with some nut butter on top. Feel free to play around with the toppings and use another type of nut if you prefer.


Oat flour cookies

Ingredients:

Serves: 12 cookies Prep time: 10 mins Cook time:10-12 mins Inactive time: 20-30 mins
  • 1 egg

  • 1/2 cup coconut sugar

  • 1/4 cup maple syrup

  • 1 tsp vanilla bean paste or vanilla extract

  • 1/2 cup coconut or rapeseed oil

  • 2 cups oat flour

  • 1 tsp baking soda

  • 1/2 cup chocolate chips

  • 6-7 brazil nuts (optional)

Instructions:

  1. In a large bowl, whisk the egg with coconut sugar, maple syrup, vanilla bean paste, and oil.

  2. Add the oat flour and baking soda to the same bowl and stir well.

  3. Add the chocolate chips to the batter and combine.

  4. Let the dough chill for 20-30 minutes. This step is optional, but it will be much easier to work with the dough after some chill time.

  5. Preheat the oven to 180 degrees and line 2 trays with baking paper.

  6. Using a spoon, add 6 balls to each tray and sprinkle each cookie with chopped brazil nuts and some extra chocolate chips.

  7. Bake for 10-12 mins. The first batch was baked for 12 min and the second one for 10 mins so do keep an eye on the cookies.

  8. Once the cookies are ready, remove them from the oven and let them cool for about 30 mins. Do not try and move them around straight away as they will break and fall apart. I also ended up shaving some extra chocolate on top when i removed them from the oven.

  9. Store the cookies in an airtight container and consume them within 2-3 days.
