Black bean brownie

Yes, there are actually beans in these brownies, but you would have no idea. You would never tell these brownies are healthy. Adding some beans just makes them a little more diverse and adds extra nutrients to your diet. It is also super quick to make, ready in less than 30 minutes.

Black beans are a good source of folate, iron, potassium, and magnesium and of course, they are naturally high in fibre and protein. I like using almond flour in this recipe as it gives the brownies extra moisture and almonds are naturally high in monounsaturated fats as well as some polyunsaturated fats which are both the kind of fats you want to include in your diet. However, you could easily replace it with oat flour instead, if you wish to make them nut free.




Black bean brownie


Ingredients:

Serving: 9 brownies Prep time: 10 mins Cook time: 15-18 mins

  • 1 cup of black beans plus a few tablespoons (230 g after draining)

  • 2 tbsp milk (I used oat milk)

  • 2 tbsp maple syrup

  • 3 tbsp cocoa powder

  • 1/4 cup coconut oil

  • 1 tsp vanilla bean paste or vanilla extract

  • 2 eggs

  • 1/4 cup coconut sugar

  • 1/2 tsp baking powder

  • 1/2 cup almond flour

  • pinch of salt

  • 1/2 cup chocolate chips

  • 3-4 chopped Brazil nuts (optional)


Instructions:

  1. Preheat the oven to 180 degrees and line a tin with baking paper.

  2. Pour the black beans into a sieve/strainer and wash them thoroughly, until the water is near clear

  3. Place the beans into a blender and add in the 2 tablespoons of maple syrup and milk and blend it until smooth.

  4. Transfer the bean mixture into a large bowl and add in the cocoa powder, coconut oil, vanilla, eggs, coconut sugar, salt, and baking powder and combine well.

  5. Once mixed, stir in the almond flour and mix.

  6. Add in the chocolate chips and pour the batter into the tin. I also sprinkled some chopped Brazil nuts on top.

  7. Bake for 15-18 mins then remove the brownie from the oven.

  8. Wait until it's completely cool then slice and serve.

  9. Store the rest of the brownies in an airtight container for up to 2-3 days.
