Zucchini Turkey Burgers with sweet potatoes & mixed veg

Zucchini Turkey Burgers with sweet potatoes & mixed veg

Serves: 3 Prep time: 10 mins Cook time: 35 mins


Ingredients:

For the burgers:

  • 500 g ground turkey (I used 2 % fat breast)

  • 2 tsp garlic infused olive oil or regular olive oil

  • 1/2-1 tsp salt (I used 1)

  • 1/2 tsp paprika powder

  • 1/2 tsp dried oregano

  • 1 heaped tbsp fresh chopped chives

  • a handful of fresh chopped parsley

  • 1 medium courgette (about 1 + 1/2 cup grated)

For the sweet potatoes:

  • 2 medium sweet potatoes (about 3 + 1/2 cups)

  • 1/2 tbsp olive oil

  • 1 tsp rosemary

  • 1/2 tsp salt

For the mixed veggies (optional):

  • 1-1 1/2 cup of frozen mixed veggies

  • 1 tbsp of ghee/butter

  • salt to taste


Instructions:

  1. Preheat the oven to 200 degrees and line 2 baking trays with baking paper.

  2. Peel, wash and cube up the sweet potatoes and mix them with the salt, rosemary, and olive oil in a bowl then transfer them onto one of the baking trays.

  3. Bake the sweet potatoes for 30-35 mins.

  4. Once you finished prepping the potatoes, prep the burgers.

  5. Transfer the ground turkey into a large bowl and add all the seasoning listed above for the burgers, including the oil.

  6. Using a box grater, grate the courgette, squeeze out the water with your hands and add it to the turkey.

  7. Combine all the ingredients well, then form burger shapes with your hands. I made 5 larger burgers, but you can make 6 smaller and have 3 servings.

  8. Place the burgers on the baking tray and bake them for about 25 minutes (I bake the burgers and sweet potatoes at the same time, so you do not need to wait for the sweet potatoes to be ready unless you don't have enough space in the oven).

  9. Whilst everything is baking, you can make a quick side veg. I used frozen mixed veg.

  10. Add the vegetables to a saucepan with a tablespoon of ghee/butter, and a few pinches of salt, and cook them for about 5-10 mins.
